I.O. Shen Scimitar je oblikoval Iain Devine (The Drunken Butcher), da lahko opravi več del  brez menjave noža. Evropski kot prvih 13cm noža dovoljuje sekanje manjših do srednjih kosti (perutnina in jagnjetina) . Japonski kot v naslednjih 17 cm pa natančno rezanje mesa. Je I.O. Shen izvedba klasičnega "Butchers steak" noža.

  • Na scimitarjev dvojni kot rezila moramo biti pozorni pri brušenju. Če uporabljamo brusni kamen, dokončajmo najprej en kot, preden se pomaknemo na drugega. Druge priporoečne metode so diamantni brus I.O.Shen, mesarski brus (samo za evropski kot) ali KE198, KE3000 or KE280 naprave za ostrenje (samo za japonski kot).

     

    Opomba: Samo evropski del rezila je lahko uporabljen za sekanje malih ali srednjih kosti (perutnina, jagnjetina). Japonski del v stiku s kostjo lahko utrpi poškodbe. Prosimo, uporabljajte ta nož s tem v mislih.
